German Pancakes {SRC}



It's Secret Recipe Club time again!  For those that are not familiar with the club, each month you are assigned a blog and you must make one recipe from it....but you must keep it a secret.  Then on Reveal Day you post the recipe you made.  This month I was assigned Loving Life written by Kirstin.  I loved how this blog was organized.  Everything was very easy to find.  After browsing through all the recipes the one that stuck with me was German Pancakes.  I've never had one or even heard of it.  It was very neat how it rose during the baking.  When making this I was very tempted to add some baking powder but I thought I should just stick to the recipe.  And I was so glad I did. It turned out great!  It is like a thick crepe.  Similar to the Baked Oatmeal with Blueberries and Bananas I recently posted, it takes some time to bake.  This is a recipe I would definitely make for dessert.  I sprinkled on some icing sugar and drizzled on some maple syrup.  Some fresh fruit would go great with this...I didn't have it with the strawberries in the picture because they were sour :(.  I made half of the original recipe since the kids already had their breakfast when I was making this.  You can easily double it but use a 9x13 baking dish.

Quick Dinner Rolls


I love baking bread but sometimes it is just too time consuming with all the waiting needed for the dough to rise and then rise again.  A lot of times I don't have that kind of time.  This recipe has no yeast which makes them very quick to whip up on a moments notice.  A long time ago I had made dinner rolls similar to these but was disappointed.  They turned out very gummy.  I found the recipe for these from the Facebook page Fauzia's Kitchen Fun.  The original recipe is from The Southern Lady Cooks.  These came out soft and reminded us more of a biscuit.  The recipe called for self-rising flour but I never have that...I don't even know if I have even seen that in the grocery store here.  So I made a substitution using all-purpose flour, baking powder and salt.

Quick and Easy Salsa


I have seen this recipe for Restaurant Style Salsa on a bunch of different blogs.  I've never given it a try because it calls for Rotel and you can't get Rotel in Canada.  One weekend my brother was heading to the  States with his family so I asked him to pick some up for me.  This salsa is extremely quick to make and tastes great.  I used it in some Spicy Bean Burritos.  I also made some Baked Garlic Pita Chips and we dipped them in the salsa.  If you can't get Rotel, substitute 1 14 oz can of tomatoes and 1 can of green chillies for the Rotel.  I haven't tried this but I've read online that it's a good substitution.  most recipes for this salsa that I saw makes a huge batch.  This recipe I got from Mountain Mama Cooks and it made a reasonable amount.

Brussel Sprouts with Balsamic and Cranberries

We are always looking for new vegetables to try and new ways of eating them.  I saw this recipe on The Pioneer Woman and her recipes always turn out fantastic so I thought I would give it a try.  It is very different from our regular Indian meals.  It is sweet with a bit of tang from the dried cranberries.  We all really enjoyed it. The first time I made it was way too many cranberries. Now when I make it I use less cranberries and oil.  The recipe below is also for a smaller amount of brussel sprouts.  It takes a bit of time to reduce down the balsamic.  Don't do it too much otherwise it will become a sticky gooey mess.


Baked Oatmeal with Blueberries and Bananas

I am not a fan of oatmeal.  But I really do want to like it.  The thought of a warm bowl of oatmeal on a cold winter morning seems really appealing but honestly I have never liked those oatmeal packets.  They are lacking in flavor and a mushy bowl of oatmeal really is not appetizing for me.  But after making this baked oatmeal my thoughts have completely changed.  If you are not an oatmeal fan this is the dish to change your mind!  My only complaint is that it bakes for 35 minutes and rests for an additional 10 minutes which is too long for me to wait in the morning.  I don't like waiting for breakfast but this is really worth the wait!  I made some minor changes to the original recipe.  I replaced the butter with oil and reduced the quantity.  I omitted the nuts and reduced the amount of blueberries.  You can change up the fruit in this to whatever you think will taste good.  I've also made it with strawberries and bananas.  Next I'm going to try it with apples!
